If you visit us for a spot of lunch, glass of bubbles, a tasting event, vineyard tour or anything else foodie, you’re sure to see our lovely chefs cooking you up a feast through our kitchen hatch. So we wanted to tell you a little more about the people behind our food.

IAN – Head Chef and Front of House Lead

 

Head Chef here since May 2019, Ian is guaranteed to bring a smile to your face whether he is preparing your food or serving it to you with his signature charm and wit (you’ll know exactly who Ian is as soon as you meet him)! 

 

Favourite food: Duck Confit

Favourite dish to make: Hake in lemon and butter, served with roasted cauliflower purée and toasted hazelnuts.

Favourite Bolney wine: Blanc de Blancs

JACK – Chef

 

Jack joined Bolney Wine Estate in October 2019. His attention to detail and love of food is evident when you are presented with one of his dishes, and not a day goes by when there’s not a smile on his face.

 

Favourite food: Any food that’s been aged including charcuterie, pickles and cheese.

Favourite dish to make: Rather than having a favourite dish to make, Jack loves discovering new methods of cooking especially when it comes to reducing waste produced in the kitchen. His latest discovery is to dehydrate gazpacho pulp to use an added ingredient in other dishes.

Favourite Bolney wine: Estate Bacchus but the new Estate Chardonnay is a close contender.

ED – Chef

 

A member of the team since May 2018, Ed has become part of the furniture. Whether helping in the vines, the winery or the warehouse, you won’t see Ed happier than when he’s in the kitchen, and his knowledge of Bolney resonates within each of his dishes.

 

Favourite food: Mussels in white wine sauce

Favourite dish to make: Pizzas (from dough to finish)

Favourite Bolney wine: Blanc de Noirs

 

LEWIS – Commis Chef

 

Last but certainly not least is Lewis. After joining Bolney in October 2019, he has become an invaluable member of our back of house team. Starting by helping out in the pot wash, Lewis has now flourished and become a dab hand at plating up our tour food.

 

Favourite food: Mum’s Lasagna

Favourite dish to make: Sushi

Favourite Bolney wine: Lychgate Red
