This complex Bacchus marries classic elderflower and gooseberry, with savoury notes of white pepper and citrus undertones for a floral finish. This English white wine is a rounded vintage, ideal for ageing.
White fish • Seafood • Hard cheese
The majority of the fruit was crush-destemmed for aromatic extraction. Cool-fermentation then took place in stainless steel tanks for around 14 days, ensuring the retention of the primary fruit aromas. Yeast strains were selected to accentuate varietal character and elegance.
Perfectly complements white fish, hard cheeses such as cheddar, and rich pâtés. For the sweeter tooth, try with chilli dark chocolate.
