You may have been introduced to vermouth from the likes of a certain Mr Bond and his famous martini (shaken not stirred) or in other cocktails such as a a delectable Negroni. There are two celebrated varieties of vermouth, sweet or red (or rosso) vermouth and dry vermouth. Whilst vermouth may not be as celebrated as gin or other spirits, we believe it deserves its place in the spotlight due to its versatility, rich history and delicious taste and charm of this enchanting fortified wine.

Bolney Rosso Vermouth

Bolney Rosso Vermouth is a unique Sussex vermouth, crafted on our beautiful Estate. Our Rosso English Vermouth combines delicious sloe and blackcurrant flavours with notes of caramel and eucalyptus. Faint hints of rose and elderflower blossom give it that slight sweetness, balanced with herbal tones. Our expert winemaker has developed distinctive flavour profiles, inspired by the nature in and around our Sussex estate, and botanicals found on the hedgerows surrounding our vines.

The Story behind Vermouth

What is vermouth?

Vermouth is a fortified wine flavoured with botanicals. It traditionally comes in two varieties; dry white vermouth and sweet red (rosso) vermouth. Dry vermouth is famously used to make Martinis, whilst sweet vermouth, like ours, is used in cocktails such as Manhattans and Negronis.

How is it made?

To make our Rosso Vermouth we first take our base wine and fortify it with ethanol and sugar. Next we “steep” the botanicals in that fortified wine, using a mixture of roots, leaves, herbs, spices and fruits. Our expert winemaker has developed distinctive flavour profiles, inspired by the nature in and around our Sussex estate, and botanicals found on the hedgerows surrounding our vines.

What is the flavour?

Our vermouth has rich, delicious hedgerow fruit flavours with floral herb, eucalyptus notes and the classic aroma of wormwood. So it tastes like a slightly sweet, rich red wine with subtle herbal and spicy tones.

Who invented it?

Legend has it that the art of fortifying wine with herbs dates back to the ancient Greeks with Hippocrates, who macerated wine with wormwood and other spices. Over the years more botanicals and herbs were added to develop the flavour into the vermouth we all know and love today.
