A unique, traditional method, sweet sparkling red wine. Aromas reminiscent of red fruits, especially red cherry, redcurrants and sweet blueberries. On the palate, the sparkling red has a wonderful creamy richness and full-bodied mousse, packed full of ripe summer fruits, with a hint of sweet spice on the finish.

The hand-picked Dornfelder was crushed and then fermented on the skins in stainless steel for 4-5 days. The wine underwent malolactic fermentation and maturation in barrel. A specialist red wine yeast was used for the first ferment and then the 18-2007 Champagne yeast for the bottle fermentation. Aged on lees for four years.
The perfect pairing for rich game dishes, BBQ meats, salami and cheese. Also great with sweeter dishes such as bitter chocolate desserts, Christmas pudding and blueberries.

The Cuvee Noir fizz is dark red in colour, deep in (subjective) flavours of plums and other dark fruits. The froth on the top of the wine when it is poured is also pink. This has become one of, if not our absolute, favourite sparkling wines, which during the lockdown spring, summer and autumn, kept our spirits up. Warning – handle with care, for sometimes the bottle can a bit lively and enthusiastic in trying to escape its confines and may attempt to shoot and wash the ceiling!
