This cheese, made using our Lychgate Rosé, has a flavour that is gentle in its complexity and lingers on the palate. The chorus of umami nuances stemming from its strong aroma then transition into a buttery creamy mix. It delicately develops into a subtle savoury tang which is reflective of the choral tones of the rosé wine in which the cheese was born.

Our Bolney Lychgate Cheese is a semi soft ripened cheese, matured for 8 – 12 weeks. At this point it is placed in a temperature and humidity controlled room and the surface is washed with a brine solution of our Lychgate Rosé English wine and a bacteria called Brevibacterium Linens (or B.linens) . This solution gives the cheese a distinct pink - orange colour. Over a 4-week period, this wash creates the distinctive savoury flavour and texture of the cheese.
