Red cherry ‱ Redcurrants ‱ Blueberries

A unique, traditional method, sweet sparkling red wine. Aromas reminiscent of red fruits, especially red cherry, redcurrants and sweet blueberries. On the palate, the sparkling red has a wonderful creamy richness and full-bodied mousse, packed full of ripe summer fruits, with a hint of sweet spice on the finish.

The hand-picked Dornfelder was crushed and then fermented on the skins in stainless steel for 4-5 days. The wine underwent malolactic fermentation and maturation in barrel. A specialist red wine yeast was used for the first ferment and then the 18-2007 Champagne yeast for the bottle fermentation. Aged on lees for four years.

The perfect pairing for rich game dishes, BBQ meats, salami and cheese. Also great with sweeter dishes such as bitter chocolate desserts, Christmas pudding and blueberries.

Grape varieties: Dornfelder

ABV: 12.5%

An incredibly rare, unusual style of wine, but which is absolutely wonderful. I love it with smoky, grilled meats or with bitter chocolate desserts. Best served chilled.

We really found this too unusual. The first sips seem quite bitter and then the “red” taste is unconventional.
This is obviously personal to the four tasters involved but we will definitely buy white bubbly next time.

The Cuvee Noir fizz is dark red in colour, deep in (subjective) flavours of plums and other dark fruits. The froth on the top of the wine when it is poured is also pink. This has become one of, if not our absolute, favourite sparkling wines, which during the lockdown spring, summer and autumn, kept our spirits up. Warning – handle with care, for sometimes the bottle can a bit lively and enthusiastic in trying to escape its confines and may attempt to shoot and wash the ceiling!

The wine was delivered really quickly! The taste is just wonderful. The longer it is in the glass the more the flavour develops. It’s also a wonderful very deep red in colour.

I love this Cuvee Noir 2014. I first tried some at a wine tasting event at Bolney Wine Estate and found it to be delicious and surprisingly so, as I had never tried chilled, sparkling red wine. This bottle was a birthday present. Heartily recommended!

I have ordered wine as gifts from Bolney before and always received exemplary service. The bottles are very well packed and always arrive on the day they should. I would not hesitate to recommend Bolney to friends.

Still a firm favourite with us. Unusual and robust and definitely not ribena

In these difficult times something special was needed for a family get together for my grandson. We had not been face to face with our family for 2-3 months and it felt longer. This wine was opened and it was spectacular. Lively on the tongue and full of fruit and great after taste. Reminded me of my times in Lombardy region where a similar wine is a enjoyed by the locals.Beautiful wine and looking forward to my next bottle.
