The grapes for this Cognac are a blend of Ugni Blanc and Folle Blanche. The white wine is distillated with the lees very slowly; developing roundness and concentration of floral character. This Cognac is aged only in old casks (Limousin oak) and has floral notes, apricot and a touch of spice.

Bottle Type: 'ARIANE’ 70 CL
ABV: 40%
Grapes varieties: Ugni-Blanc, Folle Blanche.
Soils: Limestone.

Harvest: Grapes are pressed within 30 minutes after picking to avoid oxidation.

Pressing: 3 pneumatic presses are used to fill each one of 50hl very quickly and to reduce oxidation.

Wine-making: Fermentation temperature control (maximum 27° to keep all aromas), the wine is then stored on the lees for optimum conservation without sulfites addition.

Artisanal Distillation: The white wine is distilled with the lees very slowly; this develops roundness and concentrates the floral character of the cognac.

Ageing: Aged for 12 months in new casks and then several years in "roux" casks. (Limousin oak).

Reduction: Slow, 5 degrees every 2 months maximum.

Blending: 1 growth; each blend is aged for at least 1 year in barrel.

Château Montifaud is very much a family domaine and distillery with Michel and Catherine Vallet, their son Laurent and his wife Elodie all involved.

This is lovely unadulterated pure, fine, perfumed cognac produced from vines in the heart of the Archiac where the Grande and Petite Champagne meet, much sought after by the larger Houses.
