Lychgate is a semi soft ripened cheese, matured for 8 – 12 weeks.
At this point it is placed in a temperature and humidity controlled room and the surface is washed with a brine solution of Lychgate Rosé English wine and a bacteria called Brevibacterium Linens (or B.linens) .
This solution gives the cheese a distinct pink - orange colour.
Over a 4-week period, this wash creates the distinctive savoury flavour and texture of the cheese.
The flavour of the cheese is gentle in its complexity with a flavour that lingers on the palate. With the chorus of umami nuances stemming from its strong aroma and then transitioning into a buttery creamy mix.
It then delicately develops into a subtle savoury tang which is reflective of the choral tones of the rose wine in which the cheese was born.
